One of the menu items was these Crab Stuffed Jalapenos. I had never made them before, but the idea came to me when I was eating a regular order of cream cheese poppers. Cream cheese poppers are so much better than cheddar poppers - for the record. With my recipe, though, you don't have to pick... I added both! If you would like to take it a step further with these, I would skip the bacon, coat them in panko and fry them until crisp! Either way, here's how you do it...
What You'll Need:
24 jalapeno peppers, halved
1/4 cup olive oil
16 oz. cream cheese, softened
8 oz. shredded cheddar cheese
1 lb. crab meat (your choice!)
2 tbsp. Old Bay seasoning
1 tbsp. cumin
1 tbsp. garlic powder
Salt and Fresh Cracked Pepper
24 slices bacon, sliced in half (width-wise)
2.) Combine the next seven ingredients in a large bowl until incorporated thoroughly. Using a hand-held mixer would be helpful.
3.) Fill each pepper with the cream cheese mixture, and then wrap the peppers in the sliced bacon.
4.) Switch your oven to broil, and let peppers broil until the bacon has crisped and the cream cheese becomes bubbly and gooey. My favorite thing to dip my poppers in, is a warm tomato marinara sauce. Try that or a nice creamy ranch! Enjoy!
