I have been DYING to write a post that is a healthy alternative to something... or just something healthy in general. I feel as though that's the style nowadays. Gluten-free, vegetarian, low-fat, etc. But, if any of my readers out there know me, you guys know, I am not one to skimp on the fat. Or the calories. Or the taste. I am happy just the way I am. And if loving food, and making it taste the absolute best I can, is what this blog is about, I am okay with that. For all the healthy-eating bloggers out there... keep doing what you are doing!! You're helping tons of people.
My boyfriend tends to bring me back down to earth, and lets me know the world doesn't revolve around me... and I thank him for that. However, what I always get out of those conversations, is that as long as I believe in me, and I am doing ME... I will reach who I want to reach. Therefore, I send my apologies to people who visit my site looking for something that will help them watch their waistline.
Me, however, I will keep up with the delicious appetizers, and the fatty dinners, the buttered-up sides... because that's what I believe in. I had grandparents who never knew about gluten allergies, or the downside to calories, or the fear of far... and I looked to them for inspiration. Maybe, with all the new technology we have in this day-and-age, it's not the right thing. But for me, I am going with what I learned... and I hope that my readers realize, that treating yourself doesn't mean you have "fallen off your wagon". It just means you can embrace your roots, and realize that FOOD has a part in our everyday lives. Be it fried chicken, or a healthy alternative to a certain dip, food is the background to our lives, and without out... well, really... where would we be?
And with that rant, I bring you... Buffalo Chicken Grilled Cheese.
The buffalo chicken portion of this was made in a crockpot... SUPER easy!
What You'll Need:
One pound chicken breast
1 bottle, Frank's Buffalo Sauce
1 packet Hidden Valley Ranch dressing mix
2 tablespoons butter
Putting together the grilled cheese depends on how you like your sandwich. Generally, I use butter on the outsides of the bread, but a friend from high school, Ashley Barry Schmidt, told me to try mayonnaise once in a while -- so I did that today!
My Version of Buffalo Chicken Grilled Cheese, what you'll need:
2 slices thick, sourdough bread
1 tablespoon, your favorite mayonnaise (I like the new kind made with Olive Oil)
3 slices different cheeses OR 1/3 cup shredded cheese mixture
Your favorite spice rub (I use a combination of garlic powder, onion powder, cumin, salt, fresh cracked pepper and parsley)
Start by spreading the mayo. You'll notice my bread isn't sourdough, but definitely use that!
Sprinkle mayo with your spice rub, and put bread [mayo side down] on your griddle
Pile your cheese on the bottom portion of the bread, and then pile the buffalo chicken on top
The best cheese combination would be a sharp and a creamy, they work so well!
I like sharp cheddar and havarti together.
Also, try sprinkling bleu cheese crumbles on top of chicken!
Grill the sandwich until cheese is all gooey and melting -- slice and ENJOY :)
